Cheesy Bubble and Squeak Cakes

Excellent for lazy breakfasts and brunches, best served with poached eggs, bacon or just a simple salad.
Ingredients
- 500g mashed potato
- 200g cabbage, cooked
- 1 egg, beaten
- 150g cheddar cheese, grated
- 30g flour (plain)
- 10ml sunflower oil
Directions

Sizzle leeks in a frying pan with a little olive oil till tender. Season well.

Combine the mash, greens, egg, and cheese. Season to taste. Shape into patties. Chill for an hour in the fridge if possible.

Cover the patties in the flour. Heat the oil in a large frying pan. Slide the patties in and fry on each side until golden and crisp, about 3 mins. Serve up
