Quick Plum Crumble

Cheat your way towards a baked fruity warmer by using leftover Madeira sponge cake as the topping to a juicy pud.
Ingredients
- 3lb plums, stoned and quartered
- 4 tbsp caster sugar
- 91⁄2oz Madeira cake, diced into cubes
- 7 tbsp double cream
- 23⁄4 tbsp flaked almonds
- 1⁄2oz icing sugar, for dusting
- 91⁄2fl oz water
Directions

Simmer the plums, covered, with the water and sugar until softened. Tip into a baking dish and scatter over the Madeira cake.

Drizzle with double cream, scatter with the nuts and dust with icing sugar. Bake at 180°C / 160°C (fan oven) / 360°F / Gas Mark 4, just until browning.
