Ingredients
- 2 vegetable stock cubes
- 81⁄2oz arborio rice
- 8 sprays calorie controlled cooking spray
- 1 onion
- 2 garlic cloves
- 41⁄4oz mushrooms
- 71⁄2oz spinach
- 21⁄4oz parmesan

Make up the vegetable stock using 250ml water. Boil the rice in vegetable stock until softened.

Meanwhile, spray a frying pan with calorie controlled cooking spray and sautee onion, garlic, mushroom and spinach.

Drain the rice and stir in the vegetables. Top with the parmesan cheese and serve.
