Lemon and poppy seed mug cake

Ingredients
- 10g low-fat spread
- 20g flour (plain)
- 1⁄4 tsp baking powder
- 1 tsp caster sugar
- 11⁄2 tbsp semi-skimmed milk
- 1⁄4 tsp vanilla extract
- 3⁄4 tsp poppy seeds
- 1⁄2 tsp lemon zest
- 20g lemon curd
- 1 calorie controlled cooking spray

Melt the spread and set aside to cool. Sift together the flour and baking powder then stir in the sugar. Make a well in the centre and add the milk, spread and vanilla. Mix until smooth and combined.

Stir in the half the poppy seeds, lemon zest and lemon curd. Mist a microwave-safe mug with cooking spray then spoon in the cake batter. Microwave on high for 1 minute 5 seconds or until the cake is risen and cooked.

Stand for 5 minutes, then serve with the remaining lemon curd, zest and seeds.
