Tagliatelle with Pork & Mushrooms

Fat-free fromage frais is the ingredient in this creamy, indulgent yet waist-friendly dish.
Ingredients
- 8 sprays calorie controlled cooking spray
- 1 onion, sliced
- 400g pork steaks (lean), thinly sliced
- 4 garlic cloves, crushed
- 250g button mushrooms, sliced
- 2 tbsp parsley, chopped
- 100g fat-free fromage frais
- 1⁄2 vegetable stock cube, in 100ml hot water to make stock
- 250g wholewheat tagliatelle
- 260g spinach (young leaf)

Mist a large, deep frying pan with cooking spray. Add the onion and cook over a medium heat for 3-4 minutes. Add the pork, season well and cook for 5-6 minutes, stirring occasionally.

Reduce the heat, add the garlic and mushrooms and cook for 5 minutes. Stir in the parsley, fromage frais and stock. Cook for 7-8 minutes until thickened.

Meanwhile, cook the pasta to pack instructions. Stir in the spinach and let it wilt. Top with the pork and mushroom sauce.
