Chilli Chickpea Pasta

This healthy vegetarian pasta recipe takes just 20 minutes to prepare. Perfect for midweek dinners.
Ingredients
- 250g wholemeal pasta
- 10 sprays calorie controlled cooking spray
- 1 red onion, finely chopped
- 2 garlic cloves, crushed
- 1⁄2 lemon, zest and juice of
- 1 red chilli, deseeded and finely chopped.
- 400g chickpeas, drained and rinsed
- 400g broccoli, trimmed
- 100ml vegetable stock
- 100g rocket

Cook the pasta to pack instructions. Drain, then return to the pan.

Meanwhile, mist a large nonstick frying pan with cooking spray and set over a medium heat. Add the onion and cook, stirring, for 5 minutes or until softened. Add the garlic, lemon zest and chilli, cook, stirring, for 30 seconds or until fragrant.

Add the chickpeas, broccoli and stock. Bring to the boil, then reduce the heat, cover and cook for 2 minutes or until the broccoli is just tender.

Add the chickpea mixture, rocket and lemon juice to the pasta in the pan. Season, toss to combine and serve.
