Banana Fritters

These fritters are usually deep-fried, which means they soak up a lot of fat. Our versions are lightly fried, but just as tasty.
Ingredients
- 417g flour (plain)
- 31⁄2 tsp baking powder
- 167g golden caster sugar
- 31⁄2 eggs, lightly beaten
- 334ml milk
- 10 bananas, sliced
- 7 tsp sunflower oil
- 13⁄4 tsp icing sugar
- 13⁄4 tsp cinnamon
Directions

Sift the flour and baking powder into a bowl and stir in the caster sugar. Make a well in the middle and add the egg.

Gradually beat in the milk until you have a thick, smooth batter. Dip the bananas in the batter to coat.

Heat half the oil in a frying pan and fry the fritters in batches, for 2-3mins on each side, adding more oil if needed. Lay on kitchen paper.

Transfer to a serving plate and dust with the icing sugar and cinnamon.
