Baked Salmon with Roast Jersey Royals and Tomatoes

Baking salmon is a fab way of infusing tons of flavour, and this simple one-tray main is seriously easy to make.
Ingredients
- 500g new potatoes, halved if large
- 1 red onion, quartered
- 2 tbsp rosemary
- 2 tbsp olive oil
- 540g salmon fillets
- 1 lemon, zested and quartered
- 200g cherry tomatoes

Preheat the oven to 200°C / 180°C (fan oven) / 395°F / Gas Mark 6. Cook the potatoes in a pan of boiling, salted water for 10 minutes, or until tender. Drain well.

Put the potatoes, onion and rosemary in a roasting tin and drizzle with half the oil. Roast for 10 minutes.

Add the salmon to the roasting tin and scatter over the lemon zest. Cut the tomato vine into four and add to the tin. Squeeze over a little lemon juice, then add the wedges to the tin.

Drizzle over the remaining oil, then season well. Return to the oven for a further 10 minutes, or until the salmon is just cooked through and the potatoes are crisp. Serve immediately.
