One Pot Cajun Chicken and Rice

Easy and flavorful spicy cajun chicken with peppers and rice all cooked in one pot!
Ingredients
- 6 sprays calorie controlled cooking spray
- 600g chicken fillets, skinless, cubed
- 1 onion, halved, sliced
- 1 red pepper, deseeded and sliced
- 1 yellow pepper, deseeded and sliced
- 4 garlic cloves, sliced
- 1 tbsp thyme
- 2 tsp cajun seasoning
- 200g white rice
- 150g green beans, halved
- 1 tbsp tomato puree
- 600ml chicken stock, made with 1.25 cubes

Preheat the oven to 200°C / 180°C (fan oven) / 395°F / Gas Mark 6. Mist a large, shallow, flameproof casserole with cooking spray and set over a medium-high heat. Add the chicken and cook for 5 mins until browned all over.

Add the onion, peppers and garlic, and cook for 5 mins. Add the thyme and cajun seasoning, then cook for a further 2 mins.

Stir in the rice to coat, then add the beans.

Combine the tomato puree and stock, and pour over the chicken mixture. Cover tightly with foil, then bake for 1 hour, stirring occasionally, replacing the foil each time. Allow to stand for a couple of mins before serving.
