Lay the skinless, boneless chicken breast between two pieces of cling film and tenderise (bash with a rolling pin) until flat and even.

Put the milk in a shallow dish, add the chicken and turn to coat. Put the lemon zest, plain flour and thyme on a plate and stir to mix.

Lift the chicken from the milk and add it to the flour mixture, turn to coat and shake off any excess.

Spray frying pan with cooking spray and heat. Add the chicken and fry, turning regularly, for 5-6 minutes until cooked through and golden.
