Red Pepper and Tomato Soup

A good mix of various savoury flavours, a good side to any dish.
Ingredients
- 2 tsp olive oil
- 2 garlic cloves, crushed
- 1 onion, diced
- 1 carrot, chopped
- 11⁄2 tsp mixed herbs
- 3 peppers, deseeded and sliced
- 1 vegetable stock cube
- 29oz chopped tomatoes (tinned)
- 1 tsp salt
- 33⁄4oz fat-free fromage frais
- 1 tsp granulated sugar
- 1⁄2 tsp pepper

In a large saucepan, heat oil over medium-low heat. Add garlic, stir until fragrant, about 1 minute. Add onion and carrot. Cook until onion is tender, about 5 minutes.

Add herbes de Provence or dried mixed herbs, cook, stirring until fragrant, about 1 minute. Add peppers. Cook until beginning to soften, about 5 minutes. Note: You do not need to cook peppers if they are charred and peeled.

Add stock and tomatoes. Bring to the boil. Reduce heat, cover and simmer for 25 minutes. Stir in salt, pepper, fromage frais and sugar. Pur�e in small batches; briefly reheat, then serve.
