Turkey, Pepper and Pasta Bake

An easy bake pasta dish.
Ingredients
- 8oz turkey breast mince
- 1 onion, small, chopped
- 1 garlic clove, crushed
- 1 red pepper, deseeded and chopped
- 2 tsp sunflower oil
- 15oz chopped tomatoes (tinned)
- 33⁄4fl oz vegetable stock
- 3oz wholemeal pasta, penne or farfalle
- 1oz cheddar cheese (reduced fat), grated, to garnish
- 1⁄2 tsp oregano

Preheat the oven to 180°C / 160°C (fan oven) / 360°F / Gas Mark 4. Heat a nonstick frying pan until hot, then dry-fry the turkey mince, stirring, for 7-8 minutes, or until cooked and crumbly.

Add the onion, garlic, pepper and oil.Mix well, cover and cook for 5 minutes until the vegetables have softened.

Stir in the tomatoes, stock, pasta and oregano, and season to taste. Bring to the boil and simmer for 2 minutes.

Spoon the mixture into a casserole dish. Cover and bake for 30 minutes.

Serve garnished with the Cheddar.
