Inspired by a traditional Sicilian dish, this savoury crowdpleaser is full of punchy Italian flavours
Ingredients
- 1 calorie controlled cooking spray
- 2 red onions, finely sliced
- 4 pork and herb sausages, broken up
- 1⁄2 tbsp fennel seed
- 11⁄2 tbsp balsamic vinegar
- 800g chopped tomatoes (tinned)
- 2 tbsp tomato puree
- 240g pappardelle, wholewheat
- 30g parmesan

Mist a large, deep, lidded frying pan with cooking spray and fry the onions and aubergines over a low-medium heat for 5 minutes until softened. Stir in the sausage meat and cook, stirring regularly, for 5 minutes until cook through and lightly golden. Add the fennel seeds and cook for another minute.

Stir in the balsamic vinegar and cook until just evaporated then add the chopped tomatoes and tomato puree. Half-fill an empty tomato tin with water and add to the pan. Bring to the boil, then turn down the heat, cover and simmer for 10 minutes.

Meanwhile, cook the pasta according to the pack instructions. Stir in the sauce. Serve sprinkled with Parmesan.
