Prep: 10 minutes
Cook: 15 minutes
These easy scones can be whipped up in next to no time if you've got friends popping in for tea.
- 225g flour (self raising)
- 25g low-fat spread
- 25g caster sugar
- 40g sultanas
- 150g natural fat-free yogurt
- 2 tsp skimmed milk
Preheat the oven to 200°C / 180°C (fan oven) / 395°F / Gas Mark 6. Reserve 2 teaspoons of the flour for rolling, then sift the rest into a mixing bowl. Rub the spread into the flour until the mixture resembles breadcrumbs.
Add the sugar, sultanas and yogurt, using a table knife to mix until you have a soft but not sticky dough that leaves the bowl clean. If you need to, add a little cold water to bring the dough together.
Dust the work surface with the reserved flour and pat the dough out by hand to a thickness of 2.5cm. Use a 5cm diameter cutter to stamp out as many scones as you can, then reroll the trimmings and stamp out more scones.
Put the scones on the baking tray, then brush the tops with the milk. Bake for 12-15 minutes until risen and golden brown. Cool slightly on a wire rack before serving.
