Easy fish stew

This wonderfully rich-tasting fish stew is great for sharing with friends.
Ingredients
- 2 red onions, thinly sliced
- 400g chopped tomatoes (tinned)
- 300g fish pie mix
- 100g spinach (young leaf)
- 4 sprays calorie controlled cooking spray
- 2 garlic cloves, thinly sliced
- 1 tsp chilli flakes
- 1⁄2 tsp mixed herbs
- 1 fish stock cube

Set a large nonstick pan over a medium heat and mist with cooking spray. Fry the onions for 10 minutes until softened and starting to caramelise – add a splash of water if they start to stick to the pan. Add the garlic and cook for a further 1 minute.

Add the chopped tomatoes, chilli flakes, dried mixed herbs and stock to the pan. Bring to the boil, then simmer for 20 minutes.

Add the fish pie mix and spinach to the pan and stir gently to coat in the sauce. Season to taste. Gently simmer for 5 minutes until the fish is cooked through and just starting to flake and the spinach has wilted, then serve.
