An easy to make soup. Serve with vegan-friendly bread
Ingredients
- 1 butternut squash, cut into small cubes
- 2 carrots, cut into small cubes
- 1 vegetable stock cube
Directions

Boil the squash and carrots for 15 minutes with the stock cube and (optionally) thyme, if using, until cooked through.

Transfer to a blender and blend until smooth.

Serve piping hot.
