Spicy Red Lentil Soup

This satisfying soup makes a great winter warmer.
Ingredients
- 5 sprays calorie controlled cooking spray
- 1 onion, peeled and chopped
- 2 celery sticks, chopped
- 2 garlic cloves, peeled and chopped
- 50g red lentils, dry
- 1 vegetable stock cube
- 2 tbsp tomato puree
- 400g chopped tomatoes (tinned)
- 2 bunch(es) rosemary
- (OPTIONAL) 1 tsp chilli powder

Heat a large saucepan, spray with low fat cooking spray and add the onion and celery. Cook stirring for 5 mins, add the garlic and chilli and cook for another 5 mins until tender and beginning to brown.

Add the lentils, stock (made with 850ml water), rosemary, tomatoes and tomato puree. Bring to the boil, reduce the heat and simmer for 20 mins until the lentils are soft. Remove the rosemary.

Blend the soup using a hand blender or liquidiser until smooth and season with salt and pepper.

Serve hot garnished with a sprinkling of chopped rosemary.
