Spicy Squash Soup

Ingredients
- 8 sprays calorie controlled cooking spray
- 1 onion, roughly chopped
- 2 red chillies, deseeded and finely chopped
- 2 garlic cloves, crushed
- 1⁄2 butternut squash, peeled, deseeded and cut into cubes
- 2 carrots, chopped
- 11⁄4l vegetable stock
- (OPTIONAL) 1 bunch(es) coriander leaves, to serve

Mist a large lidded pan with cooking spray and set over a medium heat. Add the onion and cook for 4-5 minutes until starting to soften. Add the chillies, garlic, squash and carrots and cook, stirring, for a further 4-5 minutes

Pour in the stock, season to taste, then bring to a boil. Reduce the heat, then cover and simmer for 20-25 minutes until the vegetables are tender.

Remove from the heat and let cool slightly before blending to a chunky consistency in a blender, or using a hand-held stick blender.

Season to taste, then serve the soup garnished with coriander, crushed tortillas and chilli powder.
