Preheat the oven to 200°C / 180°C (fan oven) / 395°F / Gas Mark 6. Mist two mini muffin tins with cooking spray.

In a large jug, beat together the eggs and milk, then season. Put the peas in a heatproof bowl and cover with boiling water. Leave for 1 minute, then drain and refresh under cold running water and drain well.

Add the peas to the egg mixture, along with the shallots, cottage cheese and mint. Stir to combine then divide the mixture between the muffin holes and bake for 12 minutes or until just set. Serve warm, sprinkled with extra chopped mint.
