Parsnip Wrapped Devils on Horseback

This vegetarian version of the classic appetizer uses soy sauce, smoked paprika, and smoked almonds to pack so much savory flavor that no one will miss the traditional bacon. Use Gorgonzola dolce if you prefer a more mild blue cheese flavor.
Ingredients
- 1⁄4 parsnip
- 19ml soy sauce
- 1⁄4 tsp smoked paprika
- 11⁄4 tbsp vegetable oil, divided
- 25g blue cheese
- 6 fresh dates, pitted
- 6 smoked almonds

Place a rack in middle of oven; preheat to 235°C / 215°C (fan oven) / 450°F / Gas Mark 8. Very thinly slice parsnip with a vegetable peeler to create wide, long ribbons.
