A quick and easy side that packs a major flavour punch.
Ingredients
- 40 baby carrots, rainbow variety, trimmed and peeled
- 2 tsp clear honey
- 2 tbsp lemon juice
- 2 tbsp chives, chopped

Roast baby carrots on a baking tray lined with baking paper in a 200°C / 180°C (fan oven) / 395°F / Gas Mark 6 oven for 30-40 minutes until golden or steam until tender.

Season with salt and pepper. Drizzle over honey and a squeeze of lemon juice. Sprinkle with fresh chives.
