One-pot Paella

Think Paella is reserved for feeding a crowd? Wrong! This simple one-pot recipe proves you can enjoy the taste of Spain whenever you fancy.
Ingredients
- 1 tsp olive oil
- 1 onion, finely chopped
- 1 garlic clove, crushed
- 150g chicken breasts, cut into small chunks
- 1 tsp smoked paprika
- 1⁄4 tsp cayenne pepper
- 1⁄2 tbsp tomato puree
- 1 tomato, diced
- 60g paella rice
- 200ml chicken stock
- 60g king prawns (raw), peeled and deveined
- 2 tsp parsley

Heat the oil in a frying pan and cook the onion and garlic for 5 minutes over a medium heat. Add the chicken to the pan and cook for 2 minutes.

Stir in the spices and tomato puree. Cook, stirring, for 2 minutes. Add the tomato, rice and three-quarters of the stock. Bring to a boil and cook for 4 minutes, then reduce the heat and simmer for 10 minutes, stirring occasionally. If the rice looks dry or starts to stick, add more of the stock.

Stir in the prawns and cook for 5 minutes until pink and cooked through. Season to taste, top with the parsley then serve with the lemon wedges on the side.
