Salmon and Cod Fishcakes

Simple to make and absolutely delicious!
Ingredients
- 200g salmon fillets
- 200g cod fillets
- 150g potatoes
- 150g sweet potato
- 40g spring onions
- 40g rocket
- 1 lime, juice and zest
- 2 tbsp olive oil
- 20g red chillies
Directions

Boil and then mash the potatoes.

Combine the spring onion with the chilli and the zest and juice of the lime and blend.

Flake the fish and mix with the mashed potato. Season as required.

Form 4 cakes and shape approximately 10cm/4 inches in size.

Place onto a lined baking tray and brush with the olive oil.

Cook at 200°C / 180°C (fan oven) / 395°F / Gas Mark 6 for 30 minutes.

Wilt the rocket and serve on top of the cakes.
