Cottage pie with Sweet Potatoes is already a treat, but this version is now even healthier!
Ingredients
- 300g sweet potato, cubed
- 2 carrots, cubed
- 1 cauliflower, in florets
- 400g beef mince
- 1 onion, chopped finely
- 1 courgette, chopped finely
- 100g mushrooms, sliced
- 1 tsp mixed herbs
- 4 tsp gravy granules, for beef

Cook the sweet potatoes, carrots and cauliflower in boiling water until tender, about 20 minutes. Meanwhile heat a large saucepan and fry the mince beef over a high heat until browned. Add the onion, mushrooms, courgette and mixed herbs to the beef with 400ml water and bring to the boil. Simmer, partially covered, for 20 minutes.

Preheat the grill and warm a large baking dish under it for 2 minutes. Drain and mash the sweet potato mixture and season. Sprinkle the gravy granules onto the beef mixture and stir until thickened. Tip the beef into the dish, spread the mash on top and grill until lightly browned. Serve with broccoli.
