A simple healthy meal, with the peppers and the cheese mixing together excellently.
Ingredients
- 2 red peppers, halved and deseeded
- 16 cherry tomatoes
- 2 garlic cloves, peeled and crushed
- 100g feta cheese
- 1 tsp chilli flakes
- 1 bunch(es) basil leaves
- 1 calorie controlled cooking spray

Preheat the oven to 200°C / 180°C (fan oven) / 395°F / Gas Mark 6

Mist a baking tray with calorie controlled spray. Place 4 red pepper halves on the tray. Stuff each half with 4 tomatoes, half a garlic clove, 25g feta cheese (crumbled), a couple of basil leaves, a pinch of chilli flakes and some black pepper.

Divide between 2 plates, garnish with basil leaves and serve with a green salad.
