Apple Traybake

Ingredients
- 50g caster sugar
- 100g low-fat spread
- 1 egg
- 250g apple sauce
- 150g flour (self raising)
- 1 tsp baking powder
- 1 tsp cinnamon
- 40g cranberries, chopped
- 2 apples, halved, cored and sliced

Preheat the oven to 180°C / 160°C (fan oven) / 360°F / Gas Mark 4. Line a baking tin with baking paper.

Reserve 1⁄2tsp caster sugar. Using a hand-held electric whisk, beat the rest of the sugar and the spread together in a large mixing bowl until creamy. Add the egg and the apple sauce and continue to beat.

Sift in the flour, baking powder and cinnamon, and mix well. Stir in the cranberries, then spoon the cake mixture into the prepared tin and spread with the spoon until even.

Arrange the sliced apples overlapping in rows on top of the cake. Sprinkle with the reserved sugar, then bake for 25-30 minutes until risen. A skewer inserted into the centre should come out clean.

Cool the cake in the tin for 15 mins, then turn out onto a cooling rack to cool completely. Cut into 16 squares and store, airtight, for up to two days.
