Lemon Curd Cod with Carrot Fries

Want a cheats lemon sauce to flavour your fish fillet? Grab a jar of lemon curd! Carrot fries taste great - and count towards your 5-a-day.
Ingredients
- 1 cod fillet
- 1 carrot, peeled and cut into batons
- 1 tsp olive oil
- 1 tsp thyme
- 2 tsp lemon curd
- 1 tsp parsley, fresh, chopped

Preheat the oven to 200°C / 180°C (fan oven) / 395°F / Gas Mark 6. Toss the carrots in the oil and thyme. Put on a baking tray and cook in the oven for 10 minutes.

Meanwhile put the cod fillet on another lined baking tray and brush with the lemon curd. Cook in the oven with the carrots for a further 12-15 minutes.

Sprinkle chopped parsley and cracked black pepper over the cod, to taste, and serve with the carrot fries.
