Cookies for breakfast? Oh yes, theres lots of good things in these. Think of them as portable granola.
Ingredients
- 125g wholemeal flour
- 150g porridge oats
- 1⁄2 tsp bicarbonate of soda
- 1⁄2 tsp cinnamon
- 100g brown sugar
- 4 tbsp maple syrup
- 2 carrots, coarsely grated
- 100ml coconut oil
- 100g dried fruit
- 100g mixed nuts

Preheat oven to 180°C / 160°C (fan oven) / 360°F / Gas Mark 4.

Add the flour, oats, bicarbonate of soda and salt to a big bowl. Mix well so the bicarbonate and salt are evenly distributed. Add the remaining ingredients. Mix together.

Scoop by the tablespoon and press into rounds on an oiled baking sheet. tidy up the edges. Youll probably get about a dozen per tray. If you dont want two batches, freeze the rest of the mix for another day.

Bake for 10 mins, or until they start setting and picking up a little colour. For crispier cookies, flip them over and bake for 3 mins or so to crisp up the bottoms.
