
Sticky Sausage Open Sandwich

Ingredients
- 3 Weight Watchers Premium Pork Sausages
- 1 red onion, cut into thin wedges
- 1 tsp olive oil
- 2 tbsp redcurrant jelly
- 1⁄2 tsp chilli flakes
- 2oz wholemeal bread

Preheat the oven to 200°C / 180°C (fan oven) / 395°F / Gas Mark 6. Put the sausages and onion in a small roasting tin, drizzle with the oil, toss to coat and bake for 25 minutes, turning occasionally, until the sausages are cooked through and the onion is beginning to caramelise.

Dot the sausages and onion with the jelly and sprinkle of the chilli. Bake for another 5 minutes, until sticky. Slice the sausages on the diagonal.

Top the bread with the sausages and onion and serve immediately.
