Winter Chicken and Pasta Soup

Ingredients
- 10 sprays calorie controlled cooking spray
- 1 red onion, chopped
- 2 garlic cloves, crushed
- 2 celery sticks, chopped
- 2 carrots, chopped
- 350g chicken breasts, cut into small chunks
- 1 tsp smoked paprika
- 11⁄4l chicken stock
- 100g pasta shapes
- 75g spinach (young leaf)

Mist a large, lidded pan with cooking spray. Cook the onion over a medium-low heat for 4-5 minutes, until it begins to soften. Add the garlic, celery and carrots and continue to cook for another 3-4 minutes.

Add the chicken and paprika to the pan and stir well, until everything is coated in the paprika. Cook for another 2 minutes, then pour in the stock and season well. Cover and cook for 10 minutes.

Add the pasta to the pan and cook for 7 minutes, or to pack instructions, until the pasta is just tender.

Stir in the spinach to wilt, season to taste and serve.
