This ultimate toastie translates as mozzarella in carriage, with the bread forming a crisp vehicle for the hot stringy cheese.
Ingredients
- 25g butter, softened
- 8 slice(s) white bread
- 250g mozzarella, sliced
- 1 bunch(es) basil
- 20ml sunflower oil
- 2 eggs
- 1 tbsp milk
- 1 tbsp olive oil
- 2 red peppers, cut into small chunks
- 200g chopped tomatoes (tinned)
- 1 garlic clove, crushed
- 1⁄2 tsp rosemary

To make the sauce, heat the oil in a pan. Add the peppers and cook for 10 minutes, then stir in the tomatoes, garlic and rosemary. Simmer for 5 minutes more, season to taste.

Butter the bread, then divide the mozzarella and basil between 4 slices. Top with the remaining bread.

Heat enough oil to cover the base of a large frying pan. In a bowl, whisk the eggs with the milk. Dip 2 sandwiches in the beaten egg, turning to cover, and then fry for 1-2 minutes on each side, until golden. Repeat with the remaining sandwiches. Serve with the sauce.
