This is a hearty, delicious alternative to traditional chilli con carne, packed with good stuff.
Ingredients
- 500g sweet potato wedges (frozen)
- 1 tbsp vegetable oil
- 1 red onion, roughly chopped
- 1 yellow pepper, deseeded and cut into small pieces
- 3 tsp cajun seasoning
- 400g mixed beans
- 400g chopped tomatoes (tinned)
- 400g pinto beans, drained and rinsed

Heat oven to 220°C / 200°C (fan oven) / 430°F / Gas Mark 7.

Cook the sweet potato wedges according to pack instructions.

For chilli, heat oil in saucepan and fry onion and pepper for 10 minutes, over medium heat, stirring often. Add cajun spice, taco beans, tomatoes and pinto beans.

Simmer, uncovered, for 15-20 minutes, stirring often. Remove pan from heat. Ladle chilli into 4 bowls, top each with hot wedges and serve.
