The perfect solution to a cold night in.
Ingredients
- 1 onion, chopped
- 2 garlic cloves, crushed
- 2 carrots, chopped
- 3 celery sticks, sliced thinly
- 1⁄2 swede, chopped
- 11⁄2l vegetable stock
- 410g borlotti beans, drained
- 400g chopped tomatoes (tinned)
- 2 tbsp tomato puree
- 1 tbsp mixed herbs
- 50g pasta shapes
- 100g green beans, trimmed and sliced

Put the first 10 ingredients into a large lidded saucepan. Bring to the boil, stirring occasionally. Partially cover, then reduce the heat and simmer for 20-25 minutes, until the vegetables are tender.

Add the pasta shapes and green beans. Stir well, then cook for a further 8-10 minutes, until the pasta is tender. Season then serve, topped with a few basil leaves.
