Sausage and apple is a match made in heaven, the sweetness of the fruit complementing the saltiness of the bangers. Autumn eating at its best.
Ingredients
- 350g new potatoes, scrubbed and halved
- 2 red peppers, deseeded and sliced
- 3 garlic cloves, peeled and pressed using the back of a knife
- 2 Braeburn apples, cored and cut into wedges
- 8 Weight Watchers Premium Pork Sausages
- 1 tbsp wholegrain mustard, plus extra to serve
- 10 sprays calorie controlled cooking spray
- 2 tsp clear honey
- 50g broccoli
- 12 fresh sage leaves

Preheat the oven to 190°C / 170°C (fan oven) / 375°F / Gas Mark 5. Put the potatoes, garlic, peppers, apples and sausages in a medium size roasting tin.

In a small bowl, combine the mustard and honey with 50ml warm water per tbsp of mustard, then pour this over the contents of the roasting tin. Season well and mist with the calorie controlled spray. Toss together, bring the sausages to sit on top of the veg, then transfer to the oven.

After 30 minutes, take the tin out of the oven and toss in the broccoli and sage. Return the tin to the oven and roast for a further 20-25 minutes, until the sausages are cooked through and everything else is tender and caramelised.

Divide between plates and serve with extra mustard on the side and a green salad.
