Banana Bread

Use up over-ripe bananas for this bread
Ingredients
- 4 bananas, large, ripe
- 23⁄4fl oz vegetable oil
- 33⁄4oz brown sugar
- 8oz flour (plain)
- 3 tsp baking powder
- 3 tsp cinnamon

Heat oven to 200°C / 180°C (fan oven) / 395°F / Gas Mark 6. Mash 3 of the Bananas with a fork, then mix well with the oil and brown sugar.

Add the flour, baking powder and cinnamon or mixed spice, and combine well.

Oil and line a loaf tin. Spoon the banana mix into the tin and level the top. Slice the remaining banana in half lengthways and press the pieces into the top.

Bake for 20 minutes. Check and cover with foil if the bread is browning too quickly.

Bake for another 20 minutes or until a skewer comes out clean.

Allow to cool a little before serving.
