Classic Chicken Cacciatore

Ingredients
- 8oz chopped tomatoes (tinned)
- 21⁄2fl oz red wine
- 1 tbsp tomato puree
- 1⁄2 tsp oregano
- 11oz chicken thigh
- 21⁄2oz mushrooms, thickly sliced
- 1 red pepper, thinly sliced
- 1 onion, chopped
- 41⁄4oz linguine pasta
- 1 tbsp rosemary
- 1⁄2 lemon zest

In a small slow cooker, stir together the tomatoes, wine tomato puree, garlic and oregano. Season to taste, then add the chicken, mushrooms, pepper and onion, stirring to combine.

Cover and cook for 2-3 hours on a high setting or 5-6 hours on a low setting, until the chicken is cooked through.

Cook the linguine to pack instructions, then divide between plates. Top with the chicken cacciatore and serve garnished with rosemary and lemon zest.
