Apple and Sultana Buns

This quick recipe for Apple and Sultana Buns is both short and sweet - and the lovely sugary flavours are made with healthy fats!
Ingredients
- 71⁄2oz flour (self raising)
- 1⁄4oz cinnamon
- 1⁄4oz baking powder
- 2oz brown sugar
- 13⁄4fl oz sunflower oil
- 61⁄2fl oz apple juice (clear)
- 1 dessert apple, peeled and chopped
- 1 egg
- 41⁄2oz sultanas
- 1oz walnut halves, chopped

Preheat the oven to 200°C / 180°C (fan oven) / 395°F / Gas Mark 6.

Sift the flour, cinnamon and baking powder into a bowl. Make a well in the centre and add all the remaining ingredients except the walnuts. Mix thoroughly.

Arrange 12 paper cases in a tartlet or muffin tin, then divide the mixture between them and sprinkle walnuts over each one.

Place in the oven and bake for 18-20 minutes until golden brown and firm in the middle.

Remove and turn out on to a wire rack. Serve while still warm.
