Take your average chicken sandwich up a notch with crunchy salad and creamy dressing.
Ingredients
- 30g red cabbage, finely shredded
- 1⁄2 roasted red pepper(s), sliced
- 1 spring onion, trimmed and finely sliced
- 1 pinch(es) mint leaves
- 2 tbsp lemon juice, half for the tzatziki
- 1 slice(s) pitta bread
- 70g chicken breasts, chopped
- 20g greek yogurt
For The Tzatziki

Make the tzatziki, Combine the ingredients in a bowl, then season to taste and set aside.

In a small bowl, toss together the cabbage, red pepper, spring onion, mint leaves and lemon juice, until combined.

Lightly toast the pitta, then split. Fill with the mixed salad and chicken, then drizzle over the tzatziki.
