Chunky Minestrone Soup

This is a very chunky, filling version of minestrone soup. Feel free to use whatever pasta shapes you prefer. A sprinkling of grated Parmesan over each serving is delicious.
Ingredients
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 red pepper, deseeded and diced
- 1 carrot, diced or sliced
- 1 sweet potato, peeled and diced
- 1 courgette, sliced
- 1 celery stick, diced
- 500ml chicken stock
- 2 tbsp tomato puree
- 1 bay leaf
- 1 tsp smoked paprika
- 2 tsp oregano
- 1 tsp parsley
- 75g dried pasta
- 75g frozen edamame beans

Preheat your slow cooker, following the manufacturer's instructions.

Add all the ingredients apart from the pasta and edamame beans to the slow cooker. Make sure the stock is hot as this will help maintain the right temperature.

Set to low, cover and cook for 6-8 hours.

Remove the lid, add the pasta and edamame beans, and more stock if needed, replace the lid and cook at High for another 30 minutes.

Serve garnished with fresh basil.
