Berry-baked oats with coconut

Leftovers can be kept covered in the fridge until the following day, then microwaved on medium until warmed through.
Ingredients
- 150g porridge oats
- 3 eggs, raw, lightly beaten
- 350g natural fat-free yogurt, plus extra to serve
- 2 tsp cinnamon
- 2 tbsp agave syrup
- 1⁄2 tsp vanilla extract
- 250g frozen mixed berries, plus extra to serve
- 2 tbsp desiccated coconut

Preheat the oven to 200°C / 180°C (fan oven) / 395°F / Gas Mark 6. In a bowl, combine the oats, eggs, yogurt, cinnamon, agave syrup and vanilla extract.

Gently stir in most of the fruit, then transfer to a baking dish. Scatter over the remaining fruit and the coconut.

Bake for 30-35 minutes until the oats are just beginning to brown on top. Serve warm topped with the extra yogurt and fruit.
