Chicken & Pesto Pizza

Two ingredient pizza base is quick and easy to make!
- 180g greek yogurt, 0% fat
- 180g flour (self raising), Plus little extra for dusting
- 100g passata
- 1 garlic clove
- 3 tbsp basil leaves, Chopped
- 2 chicken breasts, 120g, skinless
- 80g mozzarella, Reduced fat, sliced
- 1 tbsp basil pesto, Reduced fat
Preheat the oven to 220°C / 200°C (fan oven) / 430°F / Gas Mark 7 and line one baking tray per pizza with baking paper.
Put the yoghurt and flour in a mixing bowl and season well. Mix together until a soft dough forms, if the mixture seems too dry add a little more yoghurt until it reaches the correct consistency. Dust a work surface with the extra flour, divide up the dough as needed to roll out 22cm pizza base, place on the prepared baking tray and bake for 15 minutes or until golden.
Meanwhile mix together the passata, garlic and basil in a bowl. Spread over the cooked pizza bases and top with the chicken and mozzarella. Spoon over the pesto and bake for another 5 minutes, until the chicken is warm and the cheese has melted.
Season with freshly ground pepper and serve!
