Easy Cobb Salad

No one wants to spend hours in the kitchen when the weather starts warming up. Knock up this easy yet delicious salad in just 10 minutes flat.
Ingredients
- 2 tsp olive oil
- 125g bacon rashers, chopped
- 2 baby gem lettuce, leaves separated
- 200g plum tomatoes, chopped
- 1 avocado, peeled, stone removed and cut into bite-sized pieces
- 300g chicken breasts, cooked and cut into bitesized pieces
- 4 eggs, hard boiled, halved
- 80ml salad dressing

Heat the oil in a small nonstick frying pan over a medium-high heat. Cook the bacon, stirring, for about 5 minutes, until crisp.

Divide the lettuce, tomato, avocado, chicken and bacon between plates. Top with the egg halves and serve drizzled with the dressing.
