Prawn and Avocado Salad

A simple salad in a jar, easy for a pre-prepared lunch.
Ingredients
- 1 tsp olive oil
- 21⁄2 tsp lemon juice
- 1⁄4 tsp ground cumin
- 1⁄4 tsp clear honey
- 3 tbsp chickpeas, drained and rinsed
- 125g prawns (cooked)
- 40g roasted red pepper(s), sliced
- 1⁄4 avocado, sliced
- 1 bunch(es) lettuce, torn
Directions

Whisk together the oil, 2 tsp of the lemon juice, the cumin and honey in 1 500ml capacity jar(s). Add the chickpeas followed by the prawns and strips of roasted red peppers.

Toss the avocado with the remaining lemon juice and add to the jar, then top with the lettuce and secure the lid. Keep chilled, removing from the fridge 20 minutes before eating. Enjoy straight from the jar, or tip it into a bowl and toss to combine.
