Chicken and Mango Kebabs with Coleslaw

This fresh, vibrant chicken dish is guaranteed to brighten up any midweek slump.
Ingredients
- 640g chicken breasts, cut into large chunks
- 2 mangoes, halved, stone removed and cut into large chunks
- 1 orange, juice of
- 1 lime, zest of
- 2 red peppers
- 250g red cabbage, shredded
- 1 carrot, peeled and grated
- 1 tbsp dried coriander
- 6 tbsp greek yogurt

Preheat the grill to high. Thread the chicken and mango onto the skewers. Brush them all over with the orange juice and sprinkle with the lime zest. Grill for 12-15 minutes, turning occasionally until the chicken is cooked.

Make the coleslaw. Toss the peppers, cabbage, carrot and coriander with the yogurt until combined. Season well.

Serve the kebabs with the rocket, coleslaw and lime wedges on the side.
