Chicken and Courgette Gratin

Adding generous gratings of Parmesan to any green vegetable is a wonderful way to make it really sing. And here it turns courgettes into a gorgeously gooey gratin. Gorgeous with golden roast chicken.
Ingredients
- 15g white bread
- 5 sprays calorie controlled cooking spray
- 125g chicken breasts, skinless, chopped
- 1⁄2 red onion, sliced
- 100g courgette, halved lengthways, thinly sliced
- 1 tbsp parsley, finely chopped
- 125g low fat soft cheese
Directions

Blitz the bread in a food processor to make breadcrumbs. Set aside.

Mist a frying pan with cooking spray, add the chicken and fry, stirring, for a further 5 mins.

Add the onion and courgette and fry, stirring, for a further 5 mins.

Stir in the chopped parsley and the soft cheese, and mix well.

Preheat the grill to high, Season the chicken mixture with salt and pepper, then transfer to a small baking dish. Sprinkle the breadcrumbs over the chicken and grill for 2-3 mins or until golden.
